Grilled Chicken Kabobs

Ingredients

Marinated Chicken

  • lbs boneless skinless chicken breast, cut into 1-inch cubes
  • 1 cup pineapple juice
  • cup tamari sauce
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 3 cloves garlic, minced

Kabob Veggies

  • 1 large red pepper, cut into 1-inch cubes
  • 1 large orange pepper, cut into 1-inch cubes
  • 1 large yellow pepper, cut into 1-inch cubes
  • 1 large zucchini, cut into ½-inch coins
  • 2 large red onion, cut into quarters

Instructions

  1. Combine the marinade ingredients in a bowl and whisk until combined.
  2. Add chicken cubes to a ziplock bag and pour in the marinade, sealing the bag and tossing to coat.
  3. Marinate the chicken in the refrigerator for at least 2 hours or overnight.
  4. Remove the chicken from the fridge and assemble the kabobs by threading the chicken and veggies onto skewers.
  5. Preheat the grill to medium-high heat (375-400°F).
  6. Grill the kabobs for 3-4 minutes on each side until charred, brushing with remaining marinade.
  7. Remove from the grill and serve.
