Instructions
- Soak bamboo skewers in water for 30-60 minutes if using.
- Whisk together olive oil, lemon juice, garlic, dill, parsley, sea salt, and black pepper in a small bowl.
- Thread chicken and vegetables onto the skewers, alternating for variety.
- Place the skewers in a dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the kabobs for 5-8 minutes per side until the chicken is cooked through.
