Chicken Kabobs (Mediterranean Style)

Ingredients

The kabobs

  • 1 lb Boneless skinless chicken breast
  • 2 large Bell peppers
  • 2 medium Zucchini
  • 1 large Red onion
  • 6 long Bamboo skewers

The marinade

  • ½ cup Olive oil
  • ½ cup Lemon juice
  • 2 cloves Garlic (minced)
  • 2 tbsp Fresh dill (chopped)
  • 2 tbsp Fresh parsley (chopped)
  • 1 tbsp Sea salt
  • ½ tsp Black pepper

Instructions

  1. Soak bamboo skewers in water for 30-60 minutes if using.
  2. Whisk together olive oil, lemon juice, garlic, dill, parsley, sea salt, and black pepper in a small bowl.
  3. Thread chicken and vegetables onto the skewers, alternating for variety.
  4. Place the skewers in a dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
  5. Preheat the grill to medium-high heat.
  6. Grill the kabobs for 5-8 minutes per side until the chicken is cooked through.
