Instructions
- Prepare the marinade by whisking together lemon juice, olive oil, dijon mustard, honey, oregano, parsley, garlic powder, salt, and pepper.
- Add the chicken cubes to the marinade, toss to coat, and refrigerate for 30 minutes.
- For the tzatziki sauce, mix yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt in a bowl and set aside.
- Preheat the grill to 350°F and clean the grill grates.
- Assemble the kabobs by alternating vegetables and marinated chicken on skewers.
- Grill the kabobs for 3-4 minutes on each side until charred, then let them rest for 2-3 minutes.
- Serve the kabobs with the tzatziki sauce.
