Instructions
- Prepare the marinade by whisking together all marinade ingredients and pour over the chicken in a bowl or ziplock bag, marinate for at least 30 minutes.
- Preheat the grill on medium-high heat and soak wooden skewers in cold water if using them.
- Assemble the kabobs by layering onion, chicken, zucchini, and cherry tomatoes on the skewers.
- Grill the kabobs for about 5 to 6 minutes on each side, brushing with reserved marinade until the chicken is cooked through.
- Prepare the tzatziki sauce by mixing yogurt, grated cucumber, lemon juice, olive oil, garlic, and fresh herbs, seasoning with salt and pepper.
- Serve the kabobs with tzatziki sauce.
