Greek Chicken Kabobs with Tzatziki Sauce

Ingredients

The marinade

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 1 Tbsp red wine vinegar
  • 4 cloves garlic, minced
  • 1 tsp honey
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 2 Tbsp fresh oregano
  • 1 Tbsp fresh parsley

The skewers

  • 1 ¼ lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 medium zucchini, cut into ½ inch slices
  • 1 pint cherry or grape tomatoes
  • 1 white onion, cut into large chunks

The tzatziki sauce

  • ½ cup plain Greek yogurt
  • ½ cup grated cucumber, water squeezed out
  • 1 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 Tbsp fresh dill, chopped
  • 2 tsp fresh parsley, chopped
  • ¼ tsp salt
  • pinch pepper

Instructions

  1. Prepare the marinade by whisking together all marinade ingredients and pour over the chicken in a bowl or ziplock bag, marinate for at least 30 minutes.
  2. Preheat the grill on medium-high heat and soak wooden skewers in cold water if using them.
  3. Assemble the kabobs by layering onion, chicken, zucchini, and cherry tomatoes on the skewers.
  4. Grill the kabobs for about 5 to 6 minutes on each side, brushing with reserved marinade until the chicken is cooked through.
  5. Prepare the tzatziki sauce by mixing yogurt, grated cucumber, lemon juice, olive oil, garlic, and fresh herbs, seasoning with salt and pepper.
  6. Serve the kabobs with tzatziki sauce.
