Greek Chicken Kebabs with Tzatziki Sauce

Ingredients

Marinade

  • cup olive oil or avocado oil
  • ¼ cup lemon juice
  • 1 tsp lemon zest
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp fresh oregano leaves, chopped
  • 4 cloves garlic, finely minced
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes

Skewers

  • 1 ½ lbs chicken breasts, cut into 2-inch pieces
  • 1 medium zucchini, sliced
  • 1 large sweet bell pepper, cut into squares
  • 1 medium red onion, cut into squares
  • 6–8 pieces skewers

Tzatziki Sauce

  • ½ cup grated English cucumber
  • ½ cup plain Greek yogurt
  • 1 ½ Tbsp lemon juice
  • 1 Tbsp olive oil or avocado oil
  • 1 Tbsp fresh dill
  • 2 cloves garlic, minced
  • ¼ tsp sea salt
  • ¼ tsp black pepper

Instructions

  1. Prepare the veggies, cube the chicken, and make the marinade by combining all marinade ingredients.
  2. Transfer about ¾ of the marinade to a container, add chicken, and marinate for 4-24 hours.
  3. Make the tzatziki sauce by mixing all sauce ingredients in a bowl and refrigerate.
  4. Preheat the grill to 400ºF.
  5. Assemble the kebabs by threading chicken and veggies onto skewers, discarding the marinade used for chicken.
  6. Brush kebabs with the remaining marinade and grill for 5-7 minutes on each side until cooked through.
  7. Serve kebabs with tzatziki sauce.
