Grilled Middle Eastern Chicken Kebabs

Ingredients

The chicken and marinade

  • 2 ½ pounds Boneless, Skinless Chicken Breast
  • 1 cup Greek Yogurt
  • 8 cloves Garlic
  • ¼ cup Olive Oil
  • 2 teaspoons Paprika
  • 1 teaspoon Cumin
  • ½ teaspoon Crushed Red Pepper Flakes
  • 1 whole Lemon (zested and juiced)

The skewers

  • 2 whole Red Onions (roughly chopped)

Instructions

  1. Cut the chicken breast into 1 ½ inch cubes and place in a bowl.
  2. Add Greek yogurt, olive oil, garlic, paprika, crushed red pepper flakes, lemon juice, and lemon zest to the chicken and mix well.
  3. Marinate the chicken for 30 minutes.
  4. Soak wooden skewers in water for 30 minutes to prevent burning.
  5. Assemble the kebabs by alternating chicken and onion pieces on the skewers.
  6. Heat the grill to 450°F.
  7. Cook the kebabs on the grill for 6-7 minutes on one side, then flip and cook for another 6-7 minutes until fully cooked.
  8. Remove from the grill and serve.
