Greek Chicken Kebabs

Ingredients

The marinade

  • ¼ cup olive oil
  • 2 Tbsp olive oil
  • 3 Tbsp fresh lemon juice
  • 1 Tbsp red wine vinegar
  • 3 cloves garlic
  • tsp dried oregano
  • tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp ground coriander
  • to taste salt
  • to taste black pepper

The kebabs

  • lbs boneless skinless chicken breasts
  • 2 large red bell peppers
  • 3 small zucchini
  • 1 large red onion
  • to serve tzatziki sauce

Instructions

  1. Whisk together the marinade ingredients in a bowl.
  2. Place chicken in a resealable bag, pour marinade over it, seal, and refrigerate for 45 minutes to 2 hours.
  3. Toss veggies with olive oil and season with remaining herbs and salt.
  4. Preheat the grill and thread the ingredients onto skewers.
  5. Grill the kebabs until the chicken is cooked through, about 8 to 12 minutes.
  6. Serve warm with tzatziki sauce.
