Grilled Pineapple Chicken Kabobs

Ingredients

The marinade

  • 6 oz pineapple juice
  • ¼ cup tamari sauce
  • 1 clove garlic, minced
  • ½ teaspoon smoked paprika

The chicken

  • lbs boneless skinless chicken breast, cut into 1” cubes

The kabobs

  • 3 cups cubed pineapple
  • 1 medium red onion, cut into 1” cubes
  • to taste chopped cilantro, for garnish

Instructions

  1. In a small bowl, whisk together pineapple juice, tamari sauce, minced garlic, and smoked paprika to create the marinade.
  2. Remove ¼ cup of the marinade and set it aside.
  3. Pour the remaining marinade over the chicken in a medium bowl and toss to coat. Let it marinate for 30 minutes.
  4. Preheat the grill to medium-high heat (about 375-400°F).
  5. Assemble the kabobs by alternating marinated chicken, pineapple chunks, and red onion cubes on skewers.
  6. Rub the grill grates with oil or spray with cooking spray.
  7. Place the kabobs on the grill and cook each side for 4-5 minutes until the chicken is no longer pink.
  8. Remove the kabobs from the grill and brush with the reserved marinade.
  9. Garnish with chopped cilantro and serve.
