Grilled Pineapple Chicken Kabobs

The chicken

boneless skinless chicken breast, cut into 1” cubes
The kabobs

cubed pineapple

red onion, cut into 1” cubes

chopped cilantro, for garnish
Instructions
- In a small bowl, whisk together pineapple juice, tamari sauce, minced garlic, and smoked paprika to create the marinade.
- Remove ¼ cup of the marinade and set it aside.
- Pour the remaining marinade over the chicken in a medium bowl and toss to coat. Let it marinate for 30 minutes.
- Preheat the grill to medium-high heat (about 375-400°F).
- Assemble the kabobs by alternating marinated chicken, pineapple chunks, and red onion cubes on skewers.
- Rub the grill grates with oil or spray with cooking spray.
- Place the kabobs on the grill and cook each side for 4-5 minutes until the chicken is no longer pink.
- Remove the kabobs from the grill and brush with the reserved marinade.
- Garnish with chopped cilantro and serve.
