Grilled Pineapple Chicken

The pineapple

pineapple, cored and sliced

chili powder
Instructions
- Prepare the marinade by whisking together soy sauce, ketchup, pulverized pineapple, pineapple juice, honey, rice vinegar, and sriracha.
- Pour half of the marinade over the chicken in a bag or baking dish and refrigerate for at least 30 minutes.
- Remove the chicken from the fridge and let it rest for 10-15 minutes before grilling.
- Preheat the grill to 450ºF and season the pineapple with chili powder and salt.
- Grill the chicken for 8 minutes on each side and the pineapple for 2-3 minutes on each side until grill marks appear.
- While grilling, bring the remaining marinade to a boil in a saucepan, then simmer for 2-3 minutes.
- Remove the chicken from the grill when it reaches an internal temperature of 165ºF.
- Serve the grilled pineapple over the chicken and drizzle with the cooked marinade.
