Grilled Pineapple Chicken

Ingredients

The chicken

  • 1.5 lbs. boneless skinless chicken breasts

The marinade

  • ½ cup soy sauce
  • ½ cup ketchup
  • ½ cup pulverized pineapple
  • 2 tablespoons pineapple juice
  • 2 tablespoons honey
  • 4 tablespoons rice vinegar
  • 2 teaspoons sriracha
  • ¼ teaspoon kosher salt

The pineapple

  • 1 large pineapple, cored and sliced
  • 1 teaspoon chili powder

Instructions

  1. Prepare the marinade by whisking together soy sauce, ketchup, pulverized pineapple, pineapple juice, honey, rice vinegar, and sriracha.
  2. Pour half of the marinade over the chicken in a bag or baking dish and refrigerate for at least 30 minutes.
  3. Remove the chicken from the fridge and let it rest for 10-15 minutes before grilling.
  4. Preheat the grill to 450ºF and season the pineapple with chili powder and salt.
  5. Grill the chicken for 8 minutes on each side and the pineapple for 2-3 minutes on each side until grill marks appear.
  6. While grilling, bring the remaining marinade to a boil in a saucepan, then simmer for 2-3 minutes.
  7. Remove the chicken from the grill when it reaches an internal temperature of 165ºF.
  8. Serve the grilled pineapple over the chicken and drizzle with the cooked marinade.
