Grilled Ginger & Pineapple Herb Chicken

Ingredients

  • 8-10 pieces chicken thighs (with skin)
  • 2 cloves garlic (minced/chopped)
  • 3 tsp ginger (grated/minced)
  • 1 cup pineapple juice
  • cups soy sauce (low sodium)
  • ½ cup cilantro (chopped)
  • ½ cup mint (chopped)
  • ½ cup basil (chopped)

Instructions

  1. Combine all ingredients in a large gallon-sized bag and shake to coat the chicken.
  2. Marinate in the fridge for at least 1 hour, preferably overnight.
  3. Preheat the grill to 350 degrees Fahrenheit.
  4. Place the chicken thighs on indirect heat, skin side up, and grill for 10-15 minutes.
  5. Cover the grill with vents open and cook for an additional 25 minutes.
  6. Turn the chicken and cover again until the internal temperature reaches at least 165 degrees Fahrenheit.
  7. Move the chicken to direct heat for a nice char, then let it rest for at least 10 minutes before serving.
