Healthy Grilled Pineapple Chicken

The chicken and pineapple

fresh pineapple, skin removed and cut into rounds with the core removed

boneless chicken thighs (or breasts)
The marinade

coconut aminos

pineapple juice (or substitute with water)

tomato paste

pitted dates, soaked in warm water

Instructions
- Soak the dates in warm water to soften them.
- Blend all marinade ingredients until smooth.
- Coat the chicken in the marinade and refrigerate for at least 30 minutes.
- Prepare the pineapple by cutting it into rounds and removing the core.
- Heat the grill to high heat (about 500°F).
- Grill the chicken and pineapple, flipping once and basting the chicken with marinade, until cooked through.
- Serve the grilled chicken and pineapple over rice or greens.
