Healthy Grilled Pineapple Chicken

Ingredients

The chicken and pineapple

  • 1 whole fresh pineapple, skin removed and cut into rounds with the core removed
  • 2 lbs boneless chicken thighs (or breasts)

The marinade

  • ½ cup coconut aminos
  • ¼ cup pineapple juice (or substitute with water)
  • ¼ cup tomato paste
  • 4-6 pieces pitted dates, soaked in warm water
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp smoked paprika

For serving and topping

  • as needed white or cauliflower rice
  • as needed mixed greens
  • as needed chopped green onions

Instructions

  1. Soak the dates in warm water to soften them.
  2. Blend all marinade ingredients until smooth.
  3. Coat the chicken in the marinade and refrigerate for at least 30 minutes.
  4. Prepare the pineapple by cutting it into rounds and removing the core.
  5. Heat the grill to high heat (about 500°F).
  6. Grill the chicken and pineapple, flipping once and basting the chicken with marinade, until cooked through.
  7. Serve the grilled chicken and pineapple over rice or greens.
