Hawaiian Chicken

The coconut rice

Instructions
- Combine the marinade ingredients and marinate the chicken for 2 to 24 hours.
- Preheat the grill to medium heat.
- Grill the chicken for 6-7 minutes on each side until cooked through.
- Grill the pineapple for 2-3 minutes per side.
- Prepare the coconut rice by boiling coconut milk and water, then adding salt and rice, covering and simmering for 18 minutes.
- Stir in brown sugar into the rice.
- Serve the chicken and pineapple with the coconut rice, garnished with lime wedges and cilantro if desired.
