Hawaiian Huli Huli Chicken

Ingredients

The marinade

  • cup ketchup
  • cup low-sodium soy sauce
  • cup packed light brown sugar
  • 2 Tbsp rice vinegar
  • 1 Tbsp sriracha (optional)
  • 1 Tbsp Worcestershire sauce
  • 1 tsp sesame oil
  • Tbsp minced garlic
  • Tbsp peeled and minced fresh ginger

The chicken

  • 3 lbs boneless skinless chicken thighs

For grilling

  • to taste none vegetable oil (or olive oil) for brushing grill grates

Instructions

  1. Whisk together all marinade ingredients in a bowl and reserve ¼ cup of the marinade.
  2. Place chicken in a bowl or resealable bag and pour the remaining marinade over it, tossing to coat.
  3. Refrigerate the chicken to marinate for at least 2 hours, up to 8 hours.
  4. Preheat the grill over medium heat and brush the grates with oil.
  5. Grill the chicken, turning and basting with reserved marinade until the internal temperature reaches 165°F, about 15 minutes.
  6. Serve warm, optionally garnished with green onions.
