Instructions
- Season chicken legs with pepper and set aside.
- In a bowl, mix pineapple juice, soy sauce, brown sugar, Sriracha, ketchup, ginger, cumin, lemon juice, and garlic.
- Pour the marinade over the chicken in a large bowl or zip loc bag and mix well to coat.
- Cover and refrigerate to marinate for at least 3 hours or overnight for best flavor.
- When ready to cook, remove chicken from the fridge and drain the marinade, setting it aside.
- Simmer the remaining marinade in a saucepan for about 5 minutes, adjusting taste with chicken broth and pepper.
- For grilling, oil the grill and cook chicken for about 10-15 minutes on each side, basting with the marinade in the last 5 minutes.
- For baking, preheat oven to 400°F, line a baking pan with foil, and arrange chicken on a wire rack.
- Bake chicken until cooked through and skin is crispy, about 45-50 minutes, rotating halfway through.
- Serve drizzled with sauce or on the side.
