Ingredients

The chicken

  • 3½-4 pounds chicken drumsticks

The marinade

  • 1 cup unsweetened pineapple juice
  • cup soy sauce
  • ¼ cup brown sugar
  • 2 Tablespoons honey
  • ¼ cup ketchup
  • ½ Tablespoon fresh grated ginger
  • 1 Tablespoon minced garlic
  • 1 teaspoon cumin spice
  • 1 teaspoon Sriracha
  • ½-1 Lemon juice
  • ¼ cup chicken broth
  • to taste pepper
  • to taste green onions for garnish

Instructions

  1. Season chicken legs with pepper and set aside.
  2. In a bowl, mix pineapple juice, soy sauce, brown sugar, Sriracha, ketchup, ginger, cumin, lemon juice, and garlic.
  3. Pour the marinade over the chicken in a large bowl or zip loc bag and mix well to coat.
  4. Cover and refrigerate to marinate for at least 3 hours or overnight for best flavor.
  5. When ready to cook, remove chicken from the fridge and drain the marinade, setting it aside.
  6. Simmer the remaining marinade in a saucepan for about 5 minutes, adjusting taste with chicken broth and pepper.
  7. For grilling, oil the grill and cook chicken for about 10-15 minutes on each side, basting with the marinade in the last 5 minutes.
  8. For baking, preheat oven to 400°F, line a baking pan with foil, and arrange chicken on a wire rack.
  9. Bake chicken until cooked through and skin is crispy, about 45-50 minutes, rotating halfway through.
  10. Serve drizzled with sauce or on the side.
