Ingredients

The chicken

  • 2 pounds boneless skinless chicken thighs

The marinade

  • cup + 1 tablespoon tomato ketchup
  • cup + 1 tablespoon soy sauce
  • ½ cup brown sugar
  • 2 tablespoons + 2 teaspoons rice vinegar
  • 1 clove garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon salt
  • 1 tablespoon sesame oil

Instructions

  1. Make the Huli Huli sauce by mixing the ketchup, soy sauce, brown sugar, rice vinegar, garlic, ginger, salt, and sesame oil in a bowl.
  2. Add the chicken thighs to the marinade and ensure they are fully coated. Cover and refrigerate for at least 10 minutes or up to 24 hours.
  3. Preheat the grill to medium-high heat. Reserve ½ cup of the marinade for basting, then drain excess marinade from the chicken.
  4. Grill the chicken for 2-3 minutes per side until golden, basting with the reserved marinade until the chicken reaches an internal temperature of 165°F.
  5. Let the chicken rest for 5 minutes before serving.
