Easy Grilled Hawaiian Pineapple Chicken Kabob Skewers

Ingredients

The skewers

  • 1 pound skinless chicken breasts, chopped into large chunks
  • ¾ pound fresh pineapple, chopped into large chunks
  • 1 medium red bell pepper, sliced into large pieces
  • 1 cup red onion, sliced into large pieces
  • 6 pieces cherry tomatoes

The marinade

  • 1 tablespoon chopped ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon low-sodium soy sauce
  • 4 tablespoons BBQ sauce
  • to taste McCormick's Grill Mates Chicken Seasoning
  • to taste McCormick's Grill Mates BBQ Seasoning
  • to taste salt
  • to taste pepper

Instructions

  1. 1. Season the chopped chicken with the seasonings.
  2. 2. Place the chicken in a Ziploc bag and add the soy sauce, ginger, minced garlic, and 2 tablespoons of BBQ sauce.
  3. 3. Remove air from the bag, seal it, and shake until the chicken is coated.
  4. 4. Marinate for at least 4 hours, preferably overnight.
  5. 5. Thread the chicken, onions, red pepper, and pineapples onto skewers, saving the cherry tomatoes for last.
  6. 6. Preheat the grill to medium-high heat and grill skewers for 4-5 minutes on each side until the chicken is cooked through.
  7. 7. Brush the remaining BBQ sauce over the skewers before removing from the grill.
  8. 8. Allow to cool before serving.
