Honey BBQ Grilled Chicken Skewers

Ingredients

The skewers

  • 3 pieces chicken breasts
  • 1.5 lbs chicken
  • 1 piece orange pepper
  • 1 piece yellow pepper
  • 1 small red onion
  • 2 cups cubed pineapple

The Honey BBQ sauce

  • 1 cup nonfat plain Greek yogurt
  • ¼ cup honey
  • 1 cup BBQ sauce
  • ¼ cup soy sauce
  • 2 tsp sriracha
  • 1 tsp smoked paprika
  • ½ tsp ground ginger
  • ½ tsp pepper

Instructions

  1. Cut the chicken breasts, peppers, red onion, and pineapple into cubes.
  2. Mix Greek yogurt, honey, BBQ sauce, soy sauce, sriracha, smoked paprika, ground ginger, and pepper in a small bowl until smooth.
  3. Add half of the sauce to the chicken and veggies, and marinate for 2-24 hours.
  4. When ready to grill, thread everything onto skewers and grill for 10-12 minutes, turning halfway through, until the chicken reaches 165ºF.
  5. In the last minute of grilling, brush the skewers with more honey BBQ sauce.
  6. Serve the chicken skewers with the remaining sauce for dipping.
