Ingredients

The chicken

  • 6 pieces boneless skinless chicken thighs, cut into

The marinade

  • 2 cloves garlic, minced
  • cup unpasteurized honey
  • ¼ cup white wine
  • 2 tbsp Dijon mustard
  • 1 tbsp extra-virgin olive oil
  • 1 tsp red pepper flakes, or to taste
  • 1 tsp salt
  • ½ tsp fish sauce
  • ¼ tsp cayenne pepper, or to taste

Optional garnish

  • to taste chopped green onions

Instructions

  1. Combine all marinade ingredients in a bowl and mix well.
  2. Add chicken pieces to the marinade and coat thoroughly, then refrigerate for a few hours or overnight.
  3. Soak bamboo skewers in cold water for about 30 minutes before grilling.
  4. Preheat the grill to medium-high heat.
  5. Skewer the marinated chicken onto bamboo sticks and bring the marinade to a boil in a saucepan, then simmer until thickened.
  6. Grill the chicken skewers for about 10-12 minutes, turning every 2-3 minutes and brushing with reduced marinade.
  7. Remove from grill, brush with more marinade, garnish with green onions, and serve.
