Honey Lime Chicken Skewers

Ingredients

The marinade

  • ¼ cup fresh lime juice
  • 2 tsp fresh lime zest
  • ¼ cup honey
  • 2 Tbsp soy sauce
  • 2 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced fresh ginger
  • 2 Tbsp minced fresh cilantro
  • ¾ tsp salt
  • 1 tsp freshly ground black pepper
  • ¼ tsp cayenne pepper

The chicken

  • lbs boneless skinless chicken breasts

Instructions

  1. Whisk together the marinade ingredients in a mixing bowl.
  2. Place chicken in a resealable bag and pour the marinade over it, then seal and rub the marinade into the chicken.
  3. Marinate in the fridge for at least 1 hour and up to 6 hours.
  4. Soak wooden skewers in water for at least 1 hour if using.
  5. Preheat the grill over medium heat.
  6. Thread chicken onto skewers, adding about 6 or 7 pieces to each.
  7. Brush the grill grates with oil and place the skewers on the grill.
  8. Grill for about 7 minutes per side or until the chicken reaches 165 degrees internally.
  9. Serve warm, garnished with cilantro if desired.
