Sprite-Grilled Chicken Skewers

Ingredients

Marinade

  • 8 cloves garlic
  • cups Sprite
  • cups Thai chile sauce
  • ½ cup fish sauce
  • 2 tsp Diamond Crystal kosher salt
  • 3 lb skinless, boneless chicken breasts

Grilling

  • Vegetable oil for grill
  • Juice of 3 medium limes
  • cup finely chopped cilantro
  • 1 Tbsp fish sauce

Instructions

  1. Combine garlic, Sprite, 1 cup of Thai chile sauce, fish sauce, and salt in a resealable bag or baking dish.
  2. Add chicken pieces to the marinade, seal, and chill for at least 2 hours.
  3. Prepare the grill for medium-high heat and oil the grate.
  4. Remove chicken from marinade and discard the marinade. Thread chicken onto skewers.
  5. Grill chicken skewers for 10-12 minutes, turning once, until cooked through.
  6. Let skewers rest for 5 minutes before serving.
  7. Whisk lime juice, cilantro, remaining Thai chile sauce, and fish sauce in a bowl, and serve over the chicken.
