Mango Sriracha Chicken Skewers

The salsa

mango, chopped

red sweet pepper, chopped

jalapeños, chopped

Instructions
- Soak the skewers in cold water for about 20 minutes.
- Blend all marinade ingredients except cilantro until smooth, then pulse in cilantro.
- Reserve about a cup of marinade for grilling.
- Marinate the chicken in the remaining marinade for at least 30 minutes to overnight.
- Mix all salsa ingredients in a bowl, cover, and refrigerate.
- Preheat the grill on medium-high and spray with oil.
- Thread chicken onto skewers and discard the marinade.
- Grill the skewers for 2 to 3 minutes on each side, brushing with reserved marinade.
- Serve topped with mango salsa.
