Mango Sriracha Chicken Skewers

Ingredients

The chicken

  • 2 lb. boneless, skinless chicken breasts, cut into 1-inch cubes

The marinade

  • 1 14 oz can coconut milk
  • 1 cup chopped mango
  • 2 cloves garlic, minced
  • 3 Tbsp sriracha
  • 1 Tbsp lime juice
  • 2 Tbsp honey
  • 3 Tbsp olive oil
  • to taste salt and pepper
  • 1 handful fresh cilantro

The salsa

  • cups mango, chopped
  • ½ cup red sweet pepper, chopped
  • 1 or 2 jalapeños, chopped
  • ¼ cup red onion, chopped
  • ¼ cup sliced green onions
  • 3 Tbsp cilantro, chopped
  • 2 Tbsp lime juice
  • ½ tsp lime zest

Instructions

  1. Soak the skewers in cold water for about 20 minutes.
  2. Blend all marinade ingredients except cilantro until smooth, then pulse in cilantro.
  3. Reserve about a cup of marinade for grilling.
  4. Marinate the chicken in the remaining marinade for at least 30 minutes to overnight.
  5. Mix all salsa ingredients in a bowl, cover, and refrigerate.
  6. Preheat the grill on medium-high and spray with oil.
  7. Thread chicken onto skewers and discard the marinade.
  8. Grill the skewers for 2 to 3 minutes on each side, brushing with reserved marinade.
  9. Serve topped with mango salsa.
