Hawaiian BBQ Skewers with Sriracha Lime Butter

Ingredients

The skewers

  • ½ cup BBQ sauce
  • 2 tablespoons pineapple juice
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized chunks
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped into bite-sized chunks
  • 1 orange bell pepper, chopped into bite-sized chunks
  • 1 poblano pepper, chopped into bite-sized chunks

Sriracha Honey Butter

  • 4 tablespoons salted butter, softened
  • 1-2 tablespoons sriracha
  • 1 tablespoon honey
  • zest of half lime

Instructions

  1. Whisk together the BBQ sauce, pineapple juice, lime juice, and cilantro to make the Hawaiian BBQ sauce.
  2. Toss the chicken in a ziplock bag with ¼ cup of the BBQ mixture.
  3. Prepare the grill or grill pan on medium-high heat.
  4. Thread chicken, pineapple, and bell peppers onto skewers, alternating ingredients.
  5. Brush the skewers lightly with olive oil and grill for about 10 to 12 minutes, turning occasionally until cooked through.
  6. Transfer skewers to a plate and brush with sriracha honey butter.
  7. Serve with extra BBQ sauce.
