Tequila Lime Chicken Kabobs

Ingredients

The marinade

  • 3 cloves garlic, minced
  • cup freshly-squeezed lime juice
  • cup tequila
  • 2 tablespoons vegetable or canola oil
  • ½ teaspoon freshly-cracked black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon salt

The chicken

  • 2 pounds boneless, skinless chicken breasts
  • to taste salt and freshly-cracked black pepper
  • optional finely-chopped fresh cilantro leaves

The skewers

  • as needed wooden or metal skewers

Instructions

  1. Mix garlic, lime juice, tequila, oil, black pepper, cumin, and salt in a bowl or ziplock bag.
  2. Add chicken pieces and toss to coat. Refrigerate for 30 minutes to 8 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from marinade and discard the marinade.
  5. Thread chicken onto skewers and season with extra salt and pepper.
  6. Grill skewers for 6-8 minutes, turning once, until chicken is cooked through.
  7. Serve immediately, garnished with fresh cilantro if desired.
