Tequila Lime Chicken

Ingredients

The chicken

  • 1 ½ lbs skin-on deboned chicken thighs
  • 3 cloves garlic, minced
  • lime wedges for garnishing
  • cilantro chopped, for garnishing

The marinade

  • 2 tablespoons olive oil
  • ¼ cup tequila
  • 2 tablespoons lime juice
  • 3 dashes cayenne pepper
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Rub minced garlic onto the chicken, coating it thoroughly.
  3. Whisk together all marinade ingredients in a large bowl.
  4. Add the chicken to the marinade and stir to coat; marinate for 15 minutes or up to 2 hours.
  5. Heat a skillet and pan-fry the chicken skin-side down until slightly browned.
  6. Turn the chicken over and brown the other side.
  7. Transfer the skillet to the oven and bake for 15 minutes until the skin is browned.
  8. Broil the chicken for 1 minute until the skin is charred to your liking.
  9. Transfer the chicken to a serving platter, squeeze fresh lime juice over it, garnish with cilantro, and serve.
