Tequila Lime Chicken

The chicken

The marinade

olive oil

tequila

lime juice

cayenne pepper

Instructions
- Preheat the oven to 400°F (207°C).
- Rub minced garlic onto the chicken, coating it thoroughly.
- Whisk together all marinade ingredients in a large bowl.
- Add the chicken to the marinade and stir to coat; marinate for 15 minutes or up to 2 hours.
- Heat a skillet and pan-fry the chicken skin-side down until slightly browned.
- Turn the chicken over and brown the other side.
- Transfer the skillet to the oven and bake for 15 minutes until the skin is browned.
- Broil the chicken for 1 minute until the skin is charred to your liking.
- Transfer the chicken to a serving platter, squeeze fresh lime juice over it, garnish with cilantro, and serve.
