Cilantro Lime Chicken Kebab

Ingredients

  • 1 lb boneless and skinless chicken breast, cut into cubes
  • 4 cloves garlic, minced
  • 2 tablespoons lime juice, freshly squeezed
  • ½ teaspoon chili flakes
  • 3 tablespoons cilantro leaves, chopped
  • ¼ teaspoon salt
  • 1 pinch paprika
  • 4 tablespoons olive oil
  • to taste lime wedges

Instructions

  1. Soak the bamboo skewers in cold water.
  2. Combine the chicken, garlic, lime juice, chili flakes, cilantro, salt, and paprika, ensuring the chicken is well coated.
  3. Add 2 tablespoons of olive oil and stir to coat the chicken. Marinate for at least 30 minutes, preferably for 2 hours.
  4. Thread 3 pieces of chicken onto the bamboo skewers.
  5. Fire up the grill and grill for about 10 minutes, basting with the remaining 2 tablespoons of olive oil.
  6. Remove from the grill once the chicken is cooked through and slightly charred. Serve immediately with lime wedges.
