Lime and Chile Butter Chicken Skewers

Instructions
- Mix the butter, lime zest, lime juice, chili powder, and chipotle powder in a bowl and refrigerate until firm.
- Slice chicken breasts into ½-inch strips and pound to flatten.
- Marinate chicken in ponzu, brown sugar, red chili flakes, and black pepper for at least 30 minutes.
- Soak wooden skewers in water for 30 minutes if using.
- Thread chicken onto skewers and reserve marinade.
- Boil the marinade until reduced by half and mix in half of the chile lime butter.
- Preheat and lightly oil the grill.
- Grill chicken skewers with tomatoes, lime halves, and green onions for about 2 minutes, then turn.
- Baste chicken with the marinade and turn again after 2 minutes.
- Remove vegetables when cooked and top with remaining chile lime butter.
- Serve chicken with more marinade and grilled lime juice.
