Balsamic and Honey Chicken Skewers

Ingredients

The chicken

  • 1 pound boneless skinless chicken breasts

The marinade

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • 3 tablespoons honey, divided
  • 1 teaspoon fresh rosemary, minced
  • to taste kosher salt
  • to taste freshly ground black pepper

For garnish

  • more fresh rosemary
  • more honey

Instructions

  1. Soak wooden skewers in water for 30 minutes.
  2. Trim chicken breasts and cut into 1-inch chunks.
  3. In a bowl, whisk together balsamic vinegar, olive oil, garlic, 1 tablespoon of honey, rosemary, salt, and pepper.
  4. Add chicken to the marinade and refrigerate for 1-2 hours.
  5. Preheat the grill to high.
  6. Thread chicken onto skewers.
  7. Spray grill with non-stick spray and reduce heat to medium-high.
  8. Cook chicken for 3-5 minutes on each side, basting with remaining honey, until cooked through (about 10 minutes).
  9. Let sit for 2-3 minutes before serving.
  10. Drizzle with additional honey and garnish with rosemary if desired.
