Balsamic and Honey Chicken Skewers

The marinade

honey, divided

Instructions
- Soak wooden skewers in water for 30 minutes.
- Trim chicken breasts and cut into 1-inch chunks.
- In a bowl, whisk together balsamic vinegar, olive oil, garlic, 1 tablespoon of honey, rosemary, salt, and pepper.
- Add chicken to the marinade and refrigerate for 1-2 hours.
- Preheat the grill to high.
- Thread chicken onto skewers.
- Spray grill with non-stick spray and reduce heat to medium-high.
- Cook chicken for 3-5 minutes on each side, basting with remaining honey, until cooked through (about 10 minutes).
- Let sit for 2-3 minutes before serving.
- Drizzle with additional honey and garnish with rosemary if desired.
