Ingredients

The Kabobs

  • 2.5 lbs. boneless skinless chicken breasts, cut into 1” cubes
  • 2 pieces red pepper, cut into cubes
  • 1 piece yellow pepper, cut into cubes
  • 1 piece red onion, cut into cubes
  • 1 pint cherry tomatoes
  • 1 piece squash, cut into ½” slices
  • 2 pieces zucchini, cut into ½” slices

The Marinade

  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon dry basil
  • to taste salt
  • to taste pepper

Instructions

  1. Prepare the marinade by whisking together balsamic vinegar, dijon mustard, honey, dry basil, salt, and pepper, then slowly add olive oil.
  2. In a large bowl, combine chicken cubes with half of the marinade, ensuring they are well coated. Cover and refrigerate for 30 minutes.
  3. Preheat the grill to medium-high heat (375-400°F).
  4. Assemble the kabobs by alternating chicken and vegetables on skewers.
  5. Grill the kabobs for 3-4 minutes on each side until charred. Brush with the reserved marinade and grill for an additional 2 minutes.
  6. Remove from the grill and serve.
