Ingredients

The Chicken

  • 2 whole chickens, approx. 1.75kg/4lb each, cut into 10 pieces each
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons ghee

The Apples

  • 4 large red cooking apples

The Sauce

  • ¼ cup raw honey
  • 1 each lemon (juice and zest)
  • 2 tablespoons coconut aminos
  • 1 tablespoon Dijon mustard
  • ½ teaspoon Himalayan salt
  • 1 teaspoon freshly cracked black pepper
  • 1 tablespoon fresh sage
  • 1 teaspoon fresh thyme
  • ¼ cup sliced blanched almonds, toasted
  • 2 tablespoons toasted sesame seeds

Instructions

  1. If possible, brine the chicken in a solution of 4 cups of water and 2 tablespoons of salt the night before.
  2. Preheat the oven to 375°F.
  3. Cut the chicken into pieces and pat dry, then sprinkle with salt and pepper.
  4. Melt ghee in a skillet over high heat and brown the chicken pieces for 4-5 minutes on each side.
  5. Remove the browned chicken to an oven-safe dish.
  6. Core and slice the apples, leaving the peel on.
  7. In the same skillet, discard excess fat except for 1-2 tablespoons, then add the apples and cook until golden, about 4-5 minutes.
  8. Add honey to the apples and cook for an additional 1-2 minutes.
  9. Mix in lemon juice and zest, coconut aminos, mustard, salt, pepper, and fresh herbs.
  10. Toss in toasted almonds and sesame seeds, then pour the apple mixture over the chicken.
  11. Bake in the oven for 55-60 minutes, covering with foil if it browns too quickly.
  12. Let the dish rest for about 10 minutes before serving.
