Apple Honey Roasted Chicken

Instructions
- If possible, brine the chicken in a solution of 4 cups of water and 2 tablespoons of salt the night before.
- Preheat the oven to 375°F.
- Cut the chicken into pieces and pat dry, then sprinkle with salt and pepper.
- Melt ghee in a skillet over high heat and brown the chicken pieces for 4-5 minutes on each side.
- Remove the browned chicken to an oven-safe dish.
- Core and slice the apples, leaving the peel on.
- In the same skillet, discard excess fat except for 1-2 tablespoons, then add the apples and cook until golden, about 4-5 minutes.
- Add honey to the apples and cook for an additional 1-2 minutes.
- Mix in lemon juice and zest, coconut aminos, mustard, salt, pepper, and fresh herbs.
- Toss in toasted almonds and sesame seeds, then pour the apple mixture over the chicken.
- Bake in the oven for 55-60 minutes, covering with foil if it browns too quickly.
- Let the dish rest for about 10 minutes before serving.
