Instructions
- Preheat the oven to 400°F and line a 9x13 baking dish with foil, then spread the rock salt evenly in the dish.
- Stuff the cavity of the chicken with lemon halves, garlic, and parsley.
- Rub the chicken with olive oil and sprinkle the spice mix over it, rubbing it in on all sides.
- Place the chicken breast-side down on top of the salt and bake for 40 minutes.
- Flip the chicken over and continue roasting until the internal temperature reaches 165°F.
- Remove the chicken from the oven, tent it with foil, and let it rest for 5 minutes.
- Mix honey and vinegar to create the glaze, then brush it over the chicken before slicing.
