Rock Salt Roast BBQ Honey Chicken

honey (warmed slightly if needed)
Instructions
- Preheat the oven to 400°F.
- Line a 9x13-inch pan with foil and pour the rock salt into the pan, creating a thick layer.
- Remove any innards from the chicken.
- Poke holes in the lemon and place it, along with the parsley and garlic, inside the chicken cavity.
- Mix the brown sugar, paprika, kosher salt, black pepper, chili powder, garlic powder, onion powder, and cayenne pepper in a bowl.
- Rub the seasoning mixture all over the chicken and under the skin.
- Place the chicken breast-side down on the salt bed and roast for 40 minutes.
- Flip the chicken to breast-side up and roast for an additional 40-50 minutes until cooked through.
- Brush honey over the chicken immediately after removing it from the oven.
- Let the chicken rest for 20 minutes before carving and serving.
