Rock Salt Roast BBQ Honey Chicken

Ingredients

The chicken and salt

  • 1 whole chicken (4 to 5 pounds)
  • 4 pounds rock salt (also called ice cream salt)

The aromatics

  • 1 whole lemon
  • 3-4 sprigs parsley
  • 3 cloves garlic (peeled and sliced)

The BBQ seasoning

  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon coarse black pepper
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ⅛ to ¼ teaspoon cayenne pepper
  • 2-3 tablespoons honey (warmed slightly if needed)

Instructions

  1. Preheat the oven to 400°F.
  2. Line a 9x13-inch pan with foil and pour the rock salt into the pan, creating a thick layer.
  3. Remove any innards from the chicken.
  4. Poke holes in the lemon and place it, along with the parsley and garlic, inside the chicken cavity.
  5. Mix the brown sugar, paprika, kosher salt, black pepper, chili powder, garlic powder, onion powder, and cayenne pepper in a bowl.
  6. Rub the seasoning mixture all over the chicken and under the skin.
  7. Place the chicken breast-side down on the salt bed and roast for 40 minutes.
  8. Flip the chicken to breast-side up and roast for an additional 40-50 minutes until cooked through.
  9. Brush honey over the chicken immediately after removing it from the oven.
  10. Let the chicken rest for 20 minutes before carving and serving.
