Perfect Roast Chicken
Ingredients
The chicken

chicken, 2-3 pounds
The seasoning and stuffing

olive oil

onion, quartered

garlic, cut in half crosswise

bunch
fresh thyme

whole
lemon, halved

celtic sea salt

freshly ground black pepper
Instructions
- Preheat the oven to 425°F.
- Remove the chicken giblets and rinse the chicken inside and out.
- Pat the chicken dry.
- Place the chicken in a 9 x 13 inch baking dish.
- Liberally salt and pepper the inside of the chicken.
- Stuff the cavity with the bunch of thyme, both halves of the lemon, and all the garlic.
- Brush the outside of the chicken with olive oil and sprinkle with salt and pepper.
- Tie the legs together with butcher's string and tuck the wings under the body of the chicken.
- Place each onion quarter into a corner of the dish.
- Roast the chicken for 1½ hours or until the juices run clear.
- Allow to cool slightly and serve.
