Perfect Roast Chicken

Ingredients

The chicken

  • 1 whole chicken, 2-3 pounds

The seasoning and stuffing

  • 2 tablespoons olive oil
  • 1 medium onion, quartered
  • 1 head garlic, cut in half crosswise
  • 1 bunch fresh thyme
  • 1 whole lemon, halved
  • to taste celtic sea salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Remove the chicken giblets and rinse the chicken inside and out.
  3. Pat the chicken dry.
  4. Place the chicken in a 9 x 13 inch baking dish.
  5. Liberally salt and pepper the inside of the chicken.
  6. Stuff the cavity with the bunch of thyme, both halves of the lemon, and all the garlic.
  7. Brush the outside of the chicken with olive oil and sprinkle with salt and pepper.
  8. Tie the legs together with butcher's string and tuck the wings under the body of the chicken.
  9. Place each onion quarter into a corner of the dish.
  10. Roast the chicken for 1½ hours or until the juices run clear.
  11. Allow to cool slightly and serve.
