Roasted Chicken

The chicken

Natural Whole Chicken (3.5 to 5 lbs.)

seasoning of your choice
Optional roasted vegetables

carrots, sliced into 2” chunks

red onion, cut into cubes

olive oil

thyme

teaspoon
garlic powder

ground pepper
Instructions
- Preheat the oven to 400°F and position the rack in the middle.
- Pat the whole chicken dry with a paper towel.
- Stuff the cavity of the chicken with lemon halves.
- Drizzle 1 tablespoon of olive oil over the chicken and rub it in.
- Add your seasoning and rub it all over the chicken, including inside the cavity.
- Transfer the chicken breast side up to a roasting pan or skillet.
- Using cooking twine, tie the legs together.
- Place the chicken in the oven, uncovered, and roast for 20 minutes.
- Remove from the oven, drizzle the remaining olive oil over the chicken, and continue roasting for 35-40 minutes until the thermometer reads 165°F in the thickest part of the thigh.
- Let the chicken rest for at least 15 minutes before carving.
