Whole Roasted Chicken

Ingredients

The chicken

  • 1 whole chicken (3-4 lb, giblets removed)
  • 1 tbsp mustard
  • 1 tsp salt
  • tsp pepper
  • 1 tbsp dried oregano
  • 1 juice of lemon
  • 2 tbsp olive oil

The potatoes

  • 8 medium potatoes (peeled and cut into wedges)
  • ¼ cup olive oil
  • 2 juice of lemons
  • 6 cloves garlic (pressed or chopped)
  • 2 tsp salt
  • ½ tsp pepper
  • 1 tbsp dried oregano
  • 1 tbsp mustard
  • 1 cup water

Instructions

  1. Preheat the oven to 375°F.
  2. In a large baking dish, add the potatoes and all of the potato seasonings, then toss to combine.
  3. Add 1 cup of water to the baking dish with the potatoes.
  4. Place the whole chicken on top of the potatoes and massage it with the chicken seasonings.
  5. Cover with foil and roast for 1 hour, then remove the foil and roast for an additional 45 minutes uncovered.
  6. Let the chicken rest for 15-20 minutes before carving and serving with the potatoes.
