Whole Roasted Chicken

The potatoes

medium
potatoes (peeled and cut into wedges)

Instructions
- Preheat the oven to 375°F.
- In a large baking dish, add the potatoes and all of the potato seasonings, then toss to combine.
- Add 1 cup of water to the baking dish with the potatoes.
- Place the whole chicken on top of the potatoes and massage it with the chicken seasonings.
- Cover with foil and roast for 1 hour, then remove the foil and roast for an additional 45 minutes uncovered.
- Let the chicken rest for 15-20 minutes before carving and serving with the potatoes.
