Ingredients

The chicken and seasoning

  • 1 whole chicken
  • to taste none sea salt
  • to taste none rosemary

The vegetables

  • 2 cups carrots, thinly sliced

Instructions

  1. Preheat the oven to 450°F.
  2. Grease a baking dish and fill the bottom with thinly sliced carrots.
  3. Sprinkle rosemary over the carrots.
  4. Place the chicken on top of the carrots.
  5. Season the chicken with sea salt and rosemary.
  6. Roast in the oven for about one hour.
  7. Remove from the oven and let it rest for about 10 minutes.
