Instructions
- Preheat your oven to 450°F.
- Prepare the chicken by removing any organs from the cavity and patting it dry with paper towels.
- Sprinkle salt and pepper generously over the chicken, inside and out.
- Tuck the wing tips behind the wings or slice them off to prevent burning.
- If trussing the chicken, do so now.
- Place the chicken breast-side up in a baking dish or roasting pan.
- Bake for 40 to 90 minutes, depending on the size of the chicken, until the internal temperature reaches 165°F.
- Let the chicken rest for 10 minutes before carving.
- Serve and enjoy!
