Garlic Herb Butter Roasted Chicken

The herb butter

diced fresh sage

diced fresh thyme

diced fresh tarragon

For stuffing
Instructions
- Preheat the oven to 400°F and position the rack in the middle.
- Pat the chicken dry and separate the skin from the meat carefully.
- Rub the sea salt under the skin all over the chicken.
- Mix the softened butter, sage, thyme, tarragon, and garlic in a bowl until combined.
- Rub half of the butter mixture under the skin of the chicken.
- Stuff the lemon halves inside the chicken cavity and tie the legs together with cooking twine.
- Place the chicken in the oven and roast for 20 minutes.
- Remove the chicken, rub the remaining butter mixture over it, and return it to the oven for an additional 35-40 minutes.
- Check the internal temperature of the thigh; it should reach 165°F.
- Let the chicken rest for at least 15 minutes before carving and serving.
