Ingredients

The chicken

  • 1 whole Just BARE Natural Whole Chicken (3.5 pounds)
  • 1 ½ teaspoons sea salt

The herb butter

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon diced fresh sage
  • 2 teaspoons diced fresh thyme
  • 1 teaspoon diced fresh tarragon
  • 1 clove garlic, minced

For stuffing

  • 1 whole lemon, halved

Instructions

  1. Preheat the oven to 400°F and position the rack in the middle.
  2. Pat the chicken dry and separate the skin from the meat carefully.
  3. Rub the sea salt under the skin all over the chicken.
  4. Mix the softened butter, sage, thyme, tarragon, and garlic in a bowl until combined.
  5. Rub half of the butter mixture under the skin of the chicken.
  6. Stuff the lemon halves inside the chicken cavity and tie the legs together with cooking twine.
  7. Place the chicken in the oven and roast for 20 minutes.
  8. Remove the chicken, rub the remaining butter mixture over it, and return it to the oven for an additional 35-40 minutes.
  9. Check the internal temperature of the thigh; it should reach 165°F.
  10. Let the chicken rest for at least 15 minutes before carving and serving.
