Instructions
- Brine the chicken breasts in a solution of 4 cups of water and 2 tablespoons of salt overnight for better flavor.
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Pat the chicken breasts dry, butterfly them if desired, and arrange them on the baking sheet.
- Scatter apple slices and pecans around the chicken.
- In a small bowl, mix melted ghee, honey, Dijon mustard, apple cider vinegar, chopped thyme, salt, chili pepper flakes, and ground nutmeg until well combined.
- Pour the mixture over the chicken and apples, rubbing it in with your fingers.
- Bake in the oven for 25 minutes, or until the chicken reaches an internal temperature of 165°F, tossing the ingredients occasionally.
- Serve immediately.
