Greek Herb Roasted Chicken Thighs

Ingredients

The chicken

  • 1 ½ lbs bone-in chicken thighs with skin

The Greek dressing

  • 2 sprigs rosemary
  • ¼ cup olive oil
  • ½ lemon juiced
  • 2 Tablespoons balsamic vinegar
  • 3 cloves garlic
  • ½ teaspoon kosher or sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 chopped shallots
  • 1 medium yellow onion
  • 1 lemon thinly sliced
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F and pat the chicken dry.
  2. Char the rosemary in a dry skillet over medium heat for 3-4 minutes.
  3. Strip the rosemary leaves and combine them with the other dressing ingredients in a bowl.
  4. Heat olive oil in a large skillet, season chicken with salt, and sear skin side down for about 10 minutes until golden brown.
  5. Remove excess fat from the pan, place chicken skin side up, pour the dressing over it, and add lemon slices.
  6. Bake in the oven for 25 minutes, then broil for 1-2 minutes for crispy skin.
  7. Let the chicken rest for 5-10 minutes before slicing and garnish with parsley.
