Greek Herb Roasted Chicken Thighs

Instructions
- Preheat the oven to 400°F and pat the chicken dry.
- Char the rosemary in a dry skillet over medium heat for 3-4 minutes.
- Strip the rosemary leaves and combine them with the other dressing ingredients in a bowl.
- Heat olive oil in a large skillet, season chicken with salt, and sear skin side down for about 10 minutes until golden brown.
- Remove excess fat from the pan, place chicken skin side up, pour the dressing over it, and add lemon slices.
- Bake in the oven for 25 minutes, then broil for 1-2 minutes for crispy skin.
- Let the chicken rest for 5-10 minutes before slicing and garnish with parsley.
