Roasted Chicken Thighs w/ Lemon & Thyme

Ingredients

The chicken and seasoning

  • 4–6 pieces chicken thighs, bone-in, skin on
  • ¾ – 1 teaspoon salt
  • to taste pepper

The potatoes

  • 4 medium potatoes (russets or Yukon)
  • 1 tablespoon olive oil or olive oil spray

The aromatics

  • 1 piece lemon, thinly sliced
  • 8–10 cloves garlic, whole
  • ½ piece onion, sliced (optional)
  • 1 tablespoon fresh thyme
  • sprigs fresh thyme for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Pat dry the chicken and season with salt and pepper.
  3. Prepare a baking dish or sheet pan with parchment and grease with olive oil.
  4. Thinly slice the potatoes and lay them on the sheet pan, overlapping slightly.
  5. Brush or spray the potatoes with olive oil and season with salt and pepper.
  6. Scatter lemon slices, garlic, optional onion, and thyme over the potatoes.
  7. Place the seasoned chicken thighs on top of the potatoes.
  8. Bake in the oven for 40-50 minutes, checking for doneness.
  9. Broil for extra crispiness if desired.
  10. Spoon pan juices over the chicken and potatoes before serving.
