Roasted Chicken Thighs w/ Lemon & Thyme

Instructions
- Preheat the oven to 400°F.
- Pat dry the chicken and season with salt and pepper.
- Prepare a baking dish or sheet pan with parchment and grease with olive oil.
- Thinly slice the potatoes and lay them on the sheet pan, overlapping slightly.
- Brush or spray the potatoes with olive oil and season with salt and pepper.
- Scatter lemon slices, garlic, optional onion, and thyme over the potatoes.
- Place the seasoned chicken thighs on top of the potatoes.
- Bake in the oven for 40-50 minutes, checking for doneness.
- Broil for extra crispiness if desired.
- Spoon pan juices over the chicken and potatoes before serving.
