Ingredients

The chicken

  • 2 lbs. bone-in chicken thighs

The marinade

  • 1 tablespoon stone ground mustard
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 2 tablespoons rosemary, chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat the oven to 425°F.
  2. In a small bowl, mix together the mustard, lemon juice, olive oil, melted butter, garlic, rosemary, smoked paprika, salt, and pepper.
  3. Place the chicken thighs in a baking dish.
  4. Pour the marinade over the chicken and toss to coat, placing the chicken skin side down first.
  5. Bake the chicken for 20 minutes, then flip and bake for an additional 30-35 minutes until the internal temperature reaches 165°F and the tops are golden brown.
