Honey Sesame Instant Pot Chicken

Ingredients

The chicken

  • 1 ½ lbs. boneless and skinless chicken thighs
  • to taste salt
  • to taste ground black pepper
  • 1 ½ tablespoons oil
  • 2 cloves garlic, minced
  • 1 teaspoon toasted white sesame
  • 1 tablespoon scallion, chopped

The sauce

  • ½ cup chicken broth
  • 2 ½ tablespoons honey
  • 2 tablespoons soy sauce
  • ½ teaspoon dark soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Sriracha or chili garlic sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch

Instructions

  1. Wash and rinse the chicken thighs, then pat them dry and season with salt and pepper.
  2. Mix all the sauce ingredients in a bowl until well combined and set aside.
  3. Turn on the Sauté mode on the Instant Pot and heat the oil.
  4. Pan-sear the chicken thighs until slightly brown, then add the garlic and sauté for a minute.
  5. Pour in the sauce and top with white sesame seeds.
  6. Cover the pot, select Manual, and set it to High Pressure for 8 minutes.
  7. Once cooked, perform a Quick Release and carefully remove the cover.
  8. Add chopped scallions and serve immediately, optionally reducing the sauce on Sauté mode for about 2 minutes.
