Honey Sesame Instant Pot Chicken

The sauce

soy sauce

dark soy sauce

apple cider vinegar

Sriracha or chili garlic sauce

Instructions
- Wash and rinse the chicken thighs, then pat them dry and season with salt and pepper.
- Mix all the sauce ingredients in a bowl until well combined and set aside.
- Turn on the Sauté mode on the Instant Pot and heat the oil.
- Pan-sear the chicken thighs until slightly brown, then add the garlic and sauté for a minute.
- Pour in the sauce and top with white sesame seeds.
- Cover the pot, select Manual, and set it to High Pressure for 8 minutes.
- Once cooked, perform a Quick Release and carefully remove the cover.
- Add chopped scallions and serve immediately, optionally reducing the sauce on Sauté mode for about 2 minutes.
