Instant Pot Chicken Teriyaki

Instructions
- 1. Turn on the Sauté mode on the Instant Pot and heat the cooking oil.
- 2. Pan-sear the chicken thighs until slightly brown.
- 3. Add soy sauce, mirin, and sugar to the pot.
- 4. Cover the pot, select Manual, and set to High Pressure for 6 minutes.
- 5. Perform a quick release when cooking is complete.
- 6. Open the lid and set the Instant Pot to Sauté mode again.
- 7. Add the cornstarch slurry and stir to thicken the sauce.
- 8. Turn off the heat, garnish with sesame seeds if desired, and serve with steamed rice.
