Instant Pot Chicken Teriyaki

Ingredients

The chicken

  • 1 ½ tablespoon cooking oil
  • 1 ½ lbs boneless and skinless chicken thighs

The sauce

  • 2 ½ tablespoons soy sauce
  • ½ cup mirin
  • 1 ½ tablespoons sugar
  • 1 tablespoon water
  • 1 teaspoon cornstarch
  • to taste white sesame seeds (for garnishing, optional)

Instructions

  1. 1. Turn on the Sauté mode on the Instant Pot and heat the cooking oil.
  2. 2. Pan-sear the chicken thighs until slightly brown.
  3. 3. Add soy sauce, mirin, and sugar to the pot.
  4. 4. Cover the pot, select Manual, and set to High Pressure for 6 minutes.
  5. 5. Perform a quick release when cooking is complete.
  6. 6. Open the lid and set the Instant Pot to Sauté mode again.
  7. 7. Add the cornstarch slurry and stir to thicken the sauce.
  8. 8. Turn off the heat, garnish with sesame seeds if desired, and serve with steamed rice.
