Easy Instant Pot Teriyaki Chicken

Ingredients

The chicken

  • 1 ½ pounds skinless chicken breasts
  • ½ cup chicken broth
  • to taste none salt and pepper

Homemade Teriyaki Sauce

  • ½ cup soy sauce or liquid aminos
  • ¼ cup water
  • 2 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • ¼ cup brown sweetener
  • 2 teaspoons minced ginger

Thickening Slurry

  • 2 tablespoons cornstarch
  • 2 tablespoons water

Optional Toppings

  • to taste none chopped green onions
  • to taste none sesame seeds

Instructions

  1. Add the chicken breasts, chicken broth, and all ingredients for the teriyaki sauce to the Instant Pot.
  2. Seal the lid and cook on Manual > High Pressure for 10 minutes.
  3. Allow the steam to release naturally for 10 minutes after cooking.
  4. Remove the chicken and set it aside.
  5. In a small bowl, combine cornstarch and water to create a slurry.
  6. Set the Instant Pot to the Saute function and add the thickener, stirring until the sauce thickens.
  7. Turn off the Saute function, slice the chicken, and return it to the pot.
  8. Serve the teriyaki chicken over cauliflower or brown rice.
