Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts
  • 1 1/4 lbs chicken breasts

The coating

  • ½ cup all purpose flour
  • to taste salt
  • to taste pepper

The cooking fats

  • 2 tablespoons butter
  • 2 tablespoons olive oil

The sauce

  • 12 ounces button mushrooms, sliced
  • 2 teaspoons minced garlic
  • ¾ teaspoon Italian seasoning
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • 2 tablespoons chopped parsley

Instructions

  1. Mix flour with salt and pepper on a plate.
  2. Dredge chicken breasts in the flour mixture.
  3. Set the Instant Pot to SAUTE mode and heat olive oil.
  4. Brown the chicken for 3-4 minutes per side, then remove and keep warm.
  5. Add butter and mushrooms to the pot, cooking until softened.
  6. Stir in garlic and Italian seasoning, cooking for an additional 30 seconds.
  7. Return chicken to the pot and add chicken broth.
  8. Seal the pot and cook on Manual Pressure High for 10 minutes.
  9. Release pressure manually and keep the chicken warm.
  10. Set the pot to SAUTE mode, add cream, and simmer until thickened.
  11. Serve the chicken topped with the mushroom sauce and sprinkle with parsley.
