Instructions
- Mince garlic and set aside, then mix Italian seasoning, salt, and pepper in a small container.
- Press the 'Sauté' button on the Instant Pot and add ghee, then sear chicken thighs in batches for 2-3 minutes per side, seasoning lightly.
- Remove seared chicken and deglaze the pot with chicken broth, scraping up bits from the bottom.
- Return chicken to the pot, sprinkle with garlic, and secure the lid.
- Set to cook on high pressure for 8 minutes, then quick release the pressure.
- While the chicken cooks, blend sauce ingredients until smooth and creamy.
- Remove chicken from the pot, leaving juices, then press 'Sauté' and add sauce to thicken for 3-4 minutes.
- Return chicken to the pot, toss with sauce, and serve topped with parsley if desired.
