Ingredients

The chicken

  • 2 lbs boneless, skinless chicken thighs
  • 2 tsp Italian seasoning
  • ½ tsp sea salt
  • ½ tsp ground pepper
  • 1 tbsp ghee (or coconut oil for dairy free)
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • Chopped parsley (optional topping)

The sauce

  • ½ cup water
  • 2 lemons juice of
  • 1 cup raw whole cashews
  • 1 tbsp nutritional yeast
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • ¼ tsp sea salt

Instructions

  1. Mince garlic and set aside, then mix Italian seasoning, salt, and pepper in a small container.
  2. Press the 'Sauté' button on the Instant Pot and add ghee, then sear chicken thighs in batches for 2-3 minutes per side, seasoning lightly.
  3. Remove seared chicken and deglaze the pot with chicken broth, scraping up bits from the bottom.
  4. Return chicken to the pot, sprinkle with garlic, and secure the lid.
  5. Set to cook on high pressure for 8 minutes, then quick release the pressure.
  6. While the chicken cooks, blend sauce ingredients until smooth and creamy.
  7. Remove chicken from the pot, leaving juices, then press 'Sauté' and add sauce to thicken for 3-4 minutes.
  8. Return chicken to the pot, toss with sauce, and serve topped with parsley if desired.
