Creamy Mushroom Pasta with Chicken

Ingredients

The sauce

  • 2 Tbsp olive oil
  • ½ yellow onion
  • 3 cloves garlic
  • 1 lb. mushrooms
  • 2 Tbsp all-purpose flour
  • 1 cup chicken broth
  • ½ cup white wine
  • ½ cup half & half
  • ½ tsp dried thyme
  • to taste salt and pepper
  • ¼ bunch fresh parsley
  • 2 oz. Parmesan

The main dish

  • 8 oz. pasta
  • 2 boneless, skinless chicken breasts

Instructions

  1. Season the chicken breasts with salt and pepper and cook them on a grill or skillet until cooked through.
  2. While the chicken is cooking, dice the onion and mince the garlic.
  3. Cook the onion and garlic in olive oil over medium heat until the onion is translucent.
  4. Add the sliced mushrooms and a dash of salt, cooking until the mushrooms are softened.
  5. Stir in the flour and cook for about 2 minutes, stirring constantly.
  6. Add the chicken broth, white wine, and thyme, whisking until smooth and letting it simmer until thickened.
  7. Boil water for the pasta and cook according to package instructions until al dente.
  8. Once the sauce has thickened, stir in the half & half and season with salt and pepper.
  9. Chop the parsley and stir it into the sauce, then mix in the drained pasta.
  10. Grate Parmesan over the pasta and serve with sliced chicken on top.
