Creamy Mushroom Pasta with Chicken

Instructions
- Season the chicken breasts with salt and pepper and cook them on a grill or skillet until cooked through.
- While the chicken is cooking, dice the onion and mince the garlic.
- Cook the onion and garlic in olive oil over medium heat until the onion is translucent.
- Add the sliced mushrooms and a dash of salt, cooking until the mushrooms are softened.
- Stir in the flour and cook for about 2 minutes, stirring constantly.
- Add the chicken broth, white wine, and thyme, whisking until smooth and letting it simmer until thickened.
- Boil water for the pasta and cook according to package instructions until al dente.
- Once the sauce has thickened, stir in the half & half and season with salt and pepper.
- Chop the parsley and stir it into the sauce, then mix in the drained pasta.
- Grate Parmesan over the pasta and serve with sliced chicken on top.
