Ingredients

The sauce

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 unit shallot
  • 3 sprigs thyme
  • 1 teaspoon red pepper flakes
  • Kosher salt
  • 8 ounces cremini mushrooms
  • 8 ounces shiitake mushrooms
  • ½ unit lemon juice
  • 2 tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 cup pasta water
  • 3 ounces Grana Padano cheese

The pasta

  • 1 pound pasta

Instructions

  1. Heat olive oil in a skillet and add smashed garlic, minced shallot, thyme, red pepper flakes, and salt.
  2. Add sliced mushrooms and cook until softened, then squeeze lemon juice over them.
  3. Boil salted water and cook pasta a minute less than package instructions, reserving 1 cup of pasta water.
  4. Combine pasta with butter, heavy cream, pasta water, and Grana Padano in the pot, cooking until the sauce thickens.
  5. Mix in the mushrooms and adjust salt as needed.
  6. Serve with minced parsley and extra Grana Padano on top.
