Instructions
- Heat olive oil in a skillet and add smashed garlic, minced shallot, thyme, red pepper flakes, and salt.
- Add sliced mushrooms and cook until softened, then squeeze lemon juice over them.
- Boil salted water and cook pasta a minute less than package instructions, reserving 1 cup of pasta water.
- Combine pasta with butter, heavy cream, pasta water, and Grana Padano in the pot, cooking until the sauce thickens.
- Mix in the mushrooms and adjust salt as needed.
- Serve with minced parsley and extra Grana Padano on top.
