Ingredients

The pasta

  • 8 ounce linguine
  • 2-3 tablespoon olive oil
  • 2-3 tablespoon butter
  • 1-1½ pound Cremini mushrooms
  • to taste salt
  • to taste pepper
  • 1 teaspoon Creole seasoning
  • 3-4 clove garlic

The creamy mushroom sauce

  • 1 yellow onion minced
  • 3-4 clove garlic
  • 2 teaspoon thyme
  • ¼ -½ teaspoon chili flakes
  • 2 teaspoon Creole seasoning or Italian seasoning
  • 2 tablespoon all-purpose flour
  • cup milk
  • 1 cup chicken stock
  • ½ cup Parmesan cheese
  • 2 tablespoon parsley

Instructions

  1. Boil pasta in a large pot according to packaging instructions until al dente, then drain and reserve 1-2 cups of pasta water.
  2. Heat olive oil and butter in a skillet, add mushrooms, and season with salt, pepper, and Creole seasoning. Cook until browned and softened.
  3. Add minced garlic to the mushrooms and cook until fragrant, then set aside.
  4. In the same skillet, add more olive oil and butter, followed by onions, garlic, thyme, chili flakes, and Creole seasoning. Sauté for 2-3 minutes.
  5. Add flour to the mixture and cook for about a minute to make a roux.
  6. Gradually whisk in milk and chicken stock, simmering until the sauce thickens.
  7. Stir in Parmesan cheese and the cooked pasta, adjusting the sauce thickness with reserved pasta water if necessary.
  8. Serve immediately, garnished with additional Parmesan cheese and chopped parsley.
