Instructions
- Boil pasta in a large pot according to packaging instructions until al dente, then drain and reserve 1-2 cups of pasta water.
- Heat olive oil and butter in a skillet, add mushrooms, and season with salt, pepper, and Creole seasoning. Cook until browned and softened.
- Add minced garlic to the mushrooms and cook until fragrant, then set aside.
- In the same skillet, add more olive oil and butter, followed by onions, garlic, thyme, chili flakes, and Creole seasoning. Sauté for 2-3 minutes.
- Add flour to the mixture and cook for about a minute to make a roux.
- Gradually whisk in milk and chicken stock, simmering until the sauce thickens.
- Stir in Parmesan cheese and the cooked pasta, adjusting the sauce thickness with reserved pasta water if necessary.
- Serve immediately, garnished with additional Parmesan cheese and chopped parsley.
