Mushroom Chicken

Ingredients

  • 4 slices bacon
  • 4 pieces boneless skinless chicken breasts
  • 1 tablespoon butter
  • tablespoons flour
  • 8 ounces sliced mushrooms
  • 1 teaspoon minced garlic
  • 1 cup chicken broth
  • 2 tablespoons heavy cream or half and half
  • 1 tablespoon chopped parsley
  • to taste salt
  • to taste pepper

Instructions

  1. Cook the bacon in a large pan over medium-high heat until crisp, then remove and set aside.
  2. Season the chicken breasts with salt and pepper, then cook them in the bacon fat for 5-6 minutes per side until golden brown.
  3. Remove the chicken from the pan and keep warm.
  4. Melt butter in the pan, then add mushrooms and season with salt and pepper, cooking until softened.
  5. Add minced garlic and cook for 30 seconds, then stir in flour.
  6. Slowly whisk in chicken broth, bring to a simmer, and cook until thickened.
  7. Stir in the cream, pour the mushroom sauce over the chicken, and top with reserved bacon and parsley before serving.
